Ingredients

- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 jalapeño, seeded and diced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 can (14 oz) diced tomatoes
- 4 cups chicken or vegetable broth
- 1 cup cooked shredded chicken (optional)
- 1 cup corn kernels
- 1 avocado, diced
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
- 6 corn tortillas, cut into strips
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and jalapeño. Cook until softened.
- Stir in cumin and chili powder. Cook for 1 minute.
- Add diced tomatoes and broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add shredded chicken and corn. Cook for 5 more minutes.
- Season with salt, pepper, and lime juice.
- Serve topped with avocado, cilantro, and tortilla strips.
Notes
- For extra heat, leave jalapeño seeds in.
- Use store-bought tortilla strips or bake your own.
- Vegetarian version: omit chicken and use vegetable broth.
