Description

A hearty and flavorful taco soup packed with protein and spices. Perfect for a quick weeknight dinner.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 packet taco seasoning
  • 1 tsp cumin
  • 1 tsp chili powder
  • 4 cups beef broth
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned.
  3. Add onion and garlic. Cook until softened.
  4. Stir in taco seasoning, cumin, and chili powder.
  5. Add black beans, kidney beans, corn, diced tomatoes, tomato sauce, and beef broth.
  6. Bring to a boil. Reduce heat and simmer for 20 minutes.
  7. Serve hot with your favorite toppings.

Notes

  • Use lean ground beef for less grease.
  • Top with shredded cheese, sour cream, or avocado.
