Description

A hearty and flavorful chicken tortilla soup cooked in a crockpot, perfect for a comforting meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 lime, juiced
  • 2 tbsp fresh cilantro, chopped
  • Tortilla strips for serving
  • Avocado slices for serving

Instructions

  1. Place chicken, onion, garlic, bell pepper, black beans, corn, diced tomatoes, and chicken broth in the crockpot.
  2. Add cumin, chili powder, paprika, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Remove chicken, shred with forks, and return to the pot.
  5. Stir in lime juice and cilantro.
  6. Serve with tortilla strips and avocado slices.

Notes

  • For extra spice, add a diced jalapeño.
  • Top with shredded cheese or sour cream if desired.
