- 1 lb boneless, skinless chicken breasts
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 lime, juiced
- 2 tbsp fresh cilantro, chopped
- Tortilla strips for serving
- Avocado slices for serving
Instructions
- Place chicken, onion, garlic, bell pepper, black beans, corn, diced tomatoes, and chicken broth in the crockpot.
- Add cumin, chili powder, paprika, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove chicken, shred with forks, and return to the pot.
- Stir in lime juice and cilantro.
- Serve with tortilla strips and avocado slices.
Notes
- For extra spice, add a diced jalapeño.
- Top with shredded cheese or sour cream if desired.
