- 200g fresh Chinese noodles
- 4 cups chicken or vegetable broth
- 1 cup bok choy, chopped
- 1 carrot, julienned
- 2 green onions, sliced
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 clove garlic, minced
- 1/2 tsp ginger, grated
- 1/4 tsp white pepper
- 1 egg, beaten (optional)
Instructions
- Bring the broth to a boil in a pot.
- Add garlic, ginger, soy sauce, and white pepper. Simmer for 5 minutes.
- Add bok choy and carrot. Cook for 3 minutes.
- Stir in the noodles and cook until tender, about 4 minutes.
- Slowly pour in the beaten egg while stirring to create ribbons (if using).
- Drizzle with sesame oil and garnish with green onions.
- Serve hot.
