- 2 boneless, skinless chicken breasts, sliced
- 8 oz rotini pasta
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- Salt and pepper to taste
Instructions
- Cook rotini according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned, about 5 minutes.
- Add bell peppers, onion, and garlic to the skillet. Sauté for 3-4 minutes.
- Sprinkle Cajun seasoning over the chicken and vegetables. Stir to coat evenly.
- Pour in chicken broth and heavy cream. Simmer for 2-3 minutes.
- Add cooked rotini and toss to combine. Cook for another minute to heat through.
- Season with salt and pepper to taste and serve hot.
Notes
- Adjust Cajun seasoning to your preferred spice level.
- You can substitute rotini with any short pasta.
- For a lighter version, use half-and-half instead of heavy cream.
