Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 8 oz rotini pasta
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Cook rotini according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned, about 5 minutes.
  3. Add bell peppers, onion, and garlic to the skillet. Sauté for 3-4 minutes.
  4. Sprinkle Cajun seasoning over the chicken and vegetables. Stir to coat evenly.
  5. Pour in chicken broth and heavy cream. Simmer for 2-3 minutes.
  6. Add cooked rotini and toss to combine. Cook for another minute to heat through.
  7. Season with salt and pepper to taste and serve hot.
