Description

A comforting and easy-to-make dish featuring tender chicken and fluffy dumplings cooked in a slow cooker.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup milk
  • 2 tbsp butter, melted

Instructions

  1. Place chicken, broth, carrots, celery, onion, garlic, thyme, parsley, pepper, and salt in the slow cooker.
  2. Cover and cook on low for 6 hours or high for 3 hours.
  3. Shred the chicken using two forks.
  4. In a bowl, mix flour, baking powder, milk, and melted butter to form a dough.
  5. Drop spoonfuls of dough into the slow cooker.
  6. Cover and cook on high for 30 minutes or until dumplings are fluffy.
  7. Serve hot.

Notes

  • For a thicker broth, mix 2 tbsp cornstarch with 1/4 cup water and stir into the slow cooker before adding dumplings.
  • Store leftovers in an airtight container for up to 3 days.
