Description

A simple and delicious crockpot beef and broccoli recipe with tender beef and crisp broccoli in a savory sauce.


Ingredients

  • 1.5 lbs beef sirloin, thinly sliced
  • 4 cups broccoli florets
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup beef broth
  • 3 tbsp brown sugar
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp cornstarch, mixed with 2 tbsp water

Instructions

  1. In a bowl, mix soy sauce, beef broth, brown sugar, rice vinegar, garlic, and ginger.
  2. Place beef slices in the crockpot and pour the sauce over them.
  3. Cook on low for 4-5 hours or until beef is tender.
  4. In the last 30 minutes, add broccoli florets.
  5. Stir in the cornstarch slurry to thicken the sauce.
  6. Serve hot over rice or noodles.

Notes

  • Slice beef thinly for quicker cooking.
  • For crispier broccoli, steam separately and add just before serving.
  • Adjust sugar if you prefer less sweetness.
