Ingredients

- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 4 cups beef broth
- 1 packet taco seasoning
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Fresh cilantro for garnish
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add the diced onion and minced garlic to the skillet. Cook until softened.
- Transfer the beef mixture to the crock pot.
- Add the diced tomatoes, black beans, corn, beef broth, taco seasoning, chili powder, and cumin. Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Season with salt and pepper to taste.
- Serve hot, topped with shredded cheddar cheese, sour cream, and fresh cilantro.
Notes
- You can substitute ground turkey for ground beef for a lighter option.
- Feel free to add your favorite vegetables, such as bell peppers or zucchini.
- This soup can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
