Description

A hearty and flavorful soup perfect for any occasion, made easily in a crock pot.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 4 cups beef broth
  • 1 packet taco seasoning
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Fresh cilantro for garnish

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  2. Add the diced onion and minced garlic to the skillet. Cook until softened.
  3. Transfer the beef mixture to the crock pot.
  4. Add the diced tomatoes, black beans, corn, beef broth, taco seasoning, chili powder, and cumin. Stir to combine.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with shredded cheddar cheese, sour cream, and fresh cilantro.

Notes

  • You can substitute ground turkey for ground beef for a lighter option.
  • Feel free to add your favorite vegetables, such as bell peppers or zucchini.
