Description

A comforting and easy-to-make dish featuring tender chicken and fluffy dumplings cooked in a slow cooker.


Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup milk
  • 2 tbsp butter, melted

Instructions

  1. Place chicken, carrots, celery, onion, garlic, broth, thyme, parsley, pepper, and salt in the slow cooker.
  2. Cover and cook on low for 6 hours or high for 3 hours.
  3. Shred the chicken with two forks.
  4. In a bowl, mix flour, baking powder, milk, and melted butter to form dumpling dough.
  5. Drop spoonfuls of dough into the slow cooker.
  6. Cover and cook on high for 30 minutes or until dumplings are fluffy.

Notes

  • For thicker broth, mix 2 tbsp cornstarch with 1/4 cup water and stir into the slow cooker before adding dumplings.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
