Ingredients

- 1.5 lbs small potatoes
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 2 tbsp chopped fresh dill
- 2 tbsp chopped green onions
Instructions
- Boil potatoes in salted water until tender, about 15 minutes.
- Drain potatoes and let cool slightly.
- Place potatoes on a baking sheet and gently smash each one with a fork.
- Drizzle with olive oil and season with salt and pepper.
- Bake at 425°F for 25 minutes until crispy.
- Mix mayonnaise, mustard, and lemon juice in a bowl.
- Combine crispy potatoes with dressing and fresh herbs.
- Serve warm or chilled.
