  • 1 1/2 pounds broccoli florets, cut into 1 1/2-inch pieces
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon maple syrup or honey
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the broccoli florets with olive oil, garlic powder, onion powder, salt, and pepper until evenly coated.
  3. Spread the seasoned broccoli in a single layer on the prepared baking sheet.
  4. Roast for 15 minutes.
  5. Remove the baking sheet from the oven. Using the bottom of a glass or a potato masher, gently smash each broccoli floret until flattened but still intact.
  6. Return the smashed broccoli to the oven and roast for another 15-20 minutes, or until deeply golden brown and crispy.
  7. While the broccoli roasts, whisk together the balsamic vinegar and maple syrup (or honey) in a small bowl.
  8. Once the broccoli is out of the oven, drizzle it with the balsamic glaze and sprinkle with Parmesan cheese.
  9. Toss gently to combine and serve immediately.
