- 4 large russet potatoes, peeled and sliced into 1-inch rounds
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 1 cup chicken or vegetable broth
Instructions
- Preheat oven to 450°F (230°C).
- Toss potato rounds with olive oil, salt, pepper, garlic, and rosemary.
- Arrange potatoes in a single layer on a baking sheet.
- Roast for 20 minutes, flip, then roast for another 20 minutes.
- Pour broth over the potatoes and roast for 10 more minutes.
- Serve hot.
