- 1 can (15 oz) black beans, drained and rinsed
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 6 small corn tortillas
- 1/2 cup shredded lettuce
- 1/4 cup diced tomatoes
- 1/4 cup shredded cheese (optional)
- 2 tbsp sour cream or yogurt
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pan over medium heat.
- Add black beans, cumin, paprika, garlic powder, and salt. Cook for 5 minutes, mashing slightly.
- Warm tortillas in a dry skillet for 30 seconds per side.
- Fill each tortilla with the black bean mixture.
- Fold tortillas and press gently.
- Cook tacos in the same pan until crispy, about 2-3 minutes per side.
- Top with lettuce, tomatoes, cheese, sour cream, and cilantro.
- Serve immediately.
Notes
- Use flour tortillas if preferred.
- Add avocado slices for extra creaminess.
- Adjust spices to taste.
