Description

Easy and crispy baked zucchini coated with Parmesan cheese and breadcrumbs. A perfect low-carb side dish.


Ingredients

  • 2 medium zucchinis, sliced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Slice zucchinis into 1/4-inch thick rounds.
  3. In a bowl, mix Parmesan, breadcrumbs, garlic powder, salt, and pepper.
  4. Toss zucchini slices in olive oil, then coat with the Parmesan mixture.
  5. Arrange slices on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes until golden and crispy.
  7. Serve warm.
