- 2 medium zucchinis, sliced
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 425°F (220°C).
- Slice zucchinis into 1/4-inch thick rounds.
- In a bowl, mix Parmesan, breadcrumbs, garlic powder, salt, and pepper.
- Toss zucchini slices in olive oil, then coat with the Parmesan mixture.
- Arrange slices on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes until golden and crispy.
- Serve warm.
Notes
- For extra crispiness, broil for 1-2 minutes at the end.
- Substitute panko breadcrumbs for a crunchier texture.
- Store leftovers in an airtight container for up to 2 days.
