Instructions
- Melt butter in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Stir in mushrooms and cook until they release their juices.
- Sprinkle flour over the mixture and stir well.
- Gradually pour in vegetable broth, stirring constantly.
- Bring to a simmer and cook for 10 minutes.
- Reduce heat and stir in heavy cream and thyme.
- Season with salt and pepper.
- Simmer for another 5 minutes before serving.
