- 1 pound (450g) shrimp, peeled and deveined
- 8 ounces (225g) pasta (linguine, fettuccine, or spaghetti)
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 cup chicken broth or vegetable broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- Salt to taste
- Black pepper to taste
- 1 tablespoon olive oil
Instructions
- Cook pasta according to package directions until al dente. Drain and set aside, reserving 1/2 cup pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove shrimp from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and heavy cream. Bring to a simmer and cook for 3-5 minutes, stirring occasionally, until slightly thickened.
- Stir in Parmesan cheese, salt, and black pepper.
- Add the cooked pasta and shrimp to the skillet. Toss to coat everything evenly in the sauce. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
- Stir in fresh parsley.
