Ingredients

- 2 cups dried chickpeas, soaked overnight
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tbsp olive oil
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Drain and rinse the soaked chickpeas.
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Cook until softened.
- Stir in cumin and paprika.
- Add chickpeas and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 45 minutes or until chickpeas are tender.
- Season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
- Soak chickpeas overnight for best results.
- Adjust spices to your taste.
- Store leftovers in the fridge for up to 3 days.
