Description

Ingredients

Scale
  • 2 cups dried chickpeas, soaked overnight
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 tbsp olive oil
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Drain and rinse the soaked chickpeas.
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion, garlic, carrots, and celery. Cook until softened.
  4. Stir in cumin and paprika.
  5. Add chickpeas and vegetable broth. Bring to a boil.
  6. Reduce heat and simmer for 45 minutes or until chickpeas are tender.
  7. Season with salt and pepper.
  8. Garnish with fresh parsley before serving.

  • Soak chickpeas overnight for best results.
