Description

This creamy chicken quinoa and broccoli casserole is a hearty and delicious meal, perfect for a family dinner. It combines tender chicken, fluffy quinoa, and crisp broccoli in a rich, cheesy sauce.


Ingredients

  • 2 cups cooked quinoa
  • 2 cups cooked chicken, shredded or diced
  • 3 cups broccoli florets, steamed
  • 1 can (10.5 ounces) cream of chicken soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese, divided
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cooked quinoa, shredded chicken, and steamed broccoli florets.
  3. In a separate medium bowl, whisk together the cream of chicken soup, milk, 1/2 cup of cheddar cheese, Parmesan cheese, black pepper, and garlic powder until smooth.
  4. Pour the soup mixture over the quinoa, chicken, and broccoli in the large bowl. Stir until everything is evenly coated.
  5. Spread the mixture evenly into the prepared baking dish.
  6. Sprinkle the remaining 1/2 cup of cheddar cheese over the top of the casserole.
  7. Bake for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden.
  8. Let stand for 5 minutes before serving.

Notes

  • You can use leftover chicken or rotisserie chicken to save time.
  • For a richer flavor, you can add a pinch of onion powder or a dash of hot sauce to the soup mixture.
  • If you prefer a crispier topping, you can add some crushed crackers or breadcrumbs mixed with a little melted butter over the cheese before baking.
  • This casserole can be prepared ahead of time and refrigerated. Add an extra 10-15 minutes to the baking time if baking from cold.
