- 4 cod fillets (about 6 oz each)
- 1 large celeriac (about 2 lbs)
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/4 cup milk (or cream for richer flavor)
- Salt to taste
- Black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Peel and chop the celeriac into 1-inch cubes.
- Place the celeriac in a saucepan, cover with water, and add a pinch of salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until very tender.
- While the celeriac is cooking, pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
- Heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat.
- Carefully place the cod fillets in the hot skillet, skin-side down if applicable. Cook for 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork.
- Drain the cooked celeriac. Return it to the saucepan.
- Add the butter and milk to the celeriac. Mash with a potato masher until smooth and creamy. Season with salt and pepper to taste.
- Serve the pan-fried cod immediately with a generous portion of smashed celeriac. Garnish with fresh parsley.
Notes
- For extra flavor, roast the celeriac cubes before mashing.
- A squeeze of lemon juice over the cooked cod enhances its flavor.
- Any leftover smashed celeriac can be reheated gently on the stovetop or in the microwave.
