- 1 lb boneless, skinless chicken breast, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 4 cups chicken broth
- 2 cups water
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 cup egg noodles
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp turmeric (optional)
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add diced chicken and cook until browned, about 5 minutes.
- Stir in onion, garlic, and ginger. Sauté for 2 minutes.
- Pour in chicken broth and water. Bring to a boil.
- Add carrots, celery, salt, pepper, and turmeric (if using). Simmer for 10 minutes.
- Stir in egg noodles and cook for 8-10 minutes until tender.
- Garnish with parsley before serving.
Notes
- Use rotisserie chicken for a quicker version.
- Replace egg noodles with rice or gluten-free pasta if needed.
