Description

A comforting and aromatic chicken noodle soup infused with ginger and garlic, perfect for chilly days or when you need a quick meal.


Ingredients

  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breast, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 4 cups chicken broth
  • 2 cups water
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup egg noodles
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp turmeric (optional)
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add diced chicken and cook until browned, about 5 minutes.
  3. Stir in onion, garlic, and ginger. Sauté for 2 minutes.
  4. Pour in chicken broth and water. Bring to a boil.
  5. Add carrots, celery, salt, pepper, and turmeric (if using). Simmer for 10 minutes.
  6. Stir in egg noodles and cook for 8-10 minutes until tender.
  7. Garnish with parsley before serving.

  • Replace egg noodles with rice or gluten-free pasta if needed.
