Ingredients

- 3 lbs corned beef brisket
- 4 cups water
- 1 onion, quartered
- 3 cloves garlic, minced
- 1 tsp black peppercorns
- 2 bay leaves
- 1 tsp mustard seeds
- 4 carrots, chopped
- 4 potatoes, peeled and quartered
- 1 small cabbage, cut into wedges
Instructions
- Place the corned beef in a large pot and cover with water.
- Add onion, garlic, peppercorns, bay leaves, and mustard seeds.
- Bring to a boil, then reduce heat and simmer for 2.5 hours.
- Add carrots, potatoes, and cabbage. Simmer for another 30 minutes.
- Remove the beef and let it rest for 10 minutes before slicing.
- Serve hot with the vegetables and broth.
Notes
- Use the spice packet included with the corned beef if available.
- Slice against the grain for tender pieces.
- Leftovers can be stored for up to 3 days.
