This chocolate mousse is a light and airy dessert, perfect for any occasion. It’s rich in chocolate flavor without being overly heavy.

- 1 cup heavy cream, chilled
- 4 ounces dark chocolate (60-70% cacao), finely chopped
- 2 large eggs, separated
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract (alcohol-free)
- Pinch of salt
Instructions
- In a heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water), melt the chopped dark chocolate, stirring until smooth. Remove from heat and let cool slightly.
- In a separate bowl, whisk the egg yolks with half of the granulated sugar until light and creamy. Stir the melted chocolate into the egg yolk mixture until well combined.
- In a clean, dry bowl, beat the egg whites with the pinch of salt until soft peaks form. Gradually add the remaining granulated sugar and continue beating until stiff, glossy peaks form.
- Gently fold one-third of the beaten egg whites into the chocolate mixture to lighten it. Then, gently fold in the remaining egg whites until no streaks remain.
- In another bowl, beat the chilled heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until just combined.
- Divide the mousse into serving glasses or a large bowl. Refrigerate for at least 4 hours, or until set.

- For an extra rich flavor, use a high-quality dark chocolate.
- Ensure all bowls and whisks are clean and dry when beating egg whites for best results.
- You can garnish with chocolate shavings, fresh berries, or a dusting of cocoa powder before serving.
