Description

This chocolate mousse is a light and airy dessert, perfect for any occasion. It’s rich in chocolate flavor without being overly heavy.


Ingredients

  • 1 cup heavy cream, chilled
  • 4 ounces dark chocolate (60-70% cacao), finely chopped
  • 2 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract (alcohol-free)
  • Pinch of salt

Instructions

  1. In a heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water), melt the chopped dark chocolate, stirring until smooth. Remove from heat and let cool slightly.
  2. In a separate bowl, whisk the egg yolks with half of the granulated sugar until light and creamy. Stir the melted chocolate into the egg yolk mixture until well combined.
  3. In a clean, dry bowl, beat the egg whites with the pinch of salt until soft peaks form. Gradually add the remaining granulated sugar and continue beating until stiff, glossy peaks form.
  4. Gently fold one-third of the beaten egg whites into the chocolate mixture to lighten it. Then, gently fold in the remaining egg whites until no streaks remain.
  5. In another bowl, beat the chilled heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until just combined.
  6. Divide the mousse into serving glasses or a large bowl. Refrigerate for at least 4 hours, or until set.
