Description

Ingredients

  • 4 (6 ounce) salmon fillets, skin on or off
  • 1 tablespoon olive oil
  • 1 teaspoon chipotle powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • For the Tomato Salsa:
  • 1 cup diced ripe tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat the salmon fillets dry with paper towels.
  3. In a small bowl, combine the olive oil, chipotle powder, cumin, garlic powder, onion powder, salt, and pepper.
  4. Rub the chipotle mixture evenly over both sides of the salmon fillets.
  5. Place the salmon fillets on the prepared baking sheet.
  6. Roast for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. While the salmon roasts, prepare the tomato salsa. In a medium bowl, combine the diced tomatoes, red onion, cilantro, lime juice, olive oil, salt, and pepper. Stir gently to combine.
  8. Serve the chipotle-roasted salmon immediately, topped with the fresh tomato salsa.

  • Adjust the amount of chipotle powder to your preferred spice level.
  • For a spicier salsa, add a pinch of red pepper flakes.
  • Leftover salmon can be flaked and added to salads or tacos.
