- 4 (6 ounce) salmon fillets, skin on or off
- 1 tablespoon olive oil
- 1 teaspoon chipotle powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and black pepper to taste
- For the Tomato Salsa:
- 1 cup diced ripe tomatoes
- 1/2 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 tablespoon lime juice
- 1 teaspoon olive oil
- Salt and black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat the salmon fillets dry with paper towels.
- In a small bowl, combine the olive oil, chipotle powder, cumin, garlic powder, onion powder, salt, and pepper.
- Rub the chipotle mixture evenly over both sides of the salmon fillets.
- Place the salmon fillets on the prepared baking sheet.
- Roast for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- While the salmon roasts, prepare the tomato salsa. In a medium bowl, combine the diced tomatoes, red onion, cilantro, lime juice, olive oil, salt, and pepper. Stir gently to combine.
- Serve the chipotle-roasted salmon immediately, topped with the fresh tomato salsa.
Notes
- Adjust the amount of chipotle powder to your preferred spice level.
- For a spicier salsa, add a pinch of red pepper flakes.
- Leftover salmon can be flaked and added to salads or tacos.
