Description

  • 4 (6 ounce) tilapia fillets
  • 2 tablespoons olive oil, divided
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1 lime
  • 1 red bell pepper, cored and sliced
  • 1 yellow bell pepper, cored and sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • Fresh cilantro, chopped, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, combine chili powder, garlic powder, cumin, salt, and pepper.
  3. Pat tilapia fillets dry with paper towels. Rub each fillet with 1 tablespoon of olive oil, then sprinkle generously with the spice mixture.
  4. On a large baking sheet, toss the sliced red bell pepper, yellow bell pepper, zucchini, and cherry tomatoes with the remaining 1 tablespoon of olive oil.
  5. Arrange the seasoned tilapia fillets on the same baking sheet with the vegetables.
  6. Roast for 12-15 minutes, or until the tilapia is flaky and cooked through, and the vegetables are tender-crisp.
  7. Squeeze fresh lime juice over the tilapia and vegetables.
  8. Garnish with fresh cilantro, if desired, and serve immediately.

Notes

  • You can substitute other firm white fish like cod or snapper for tilapia.
  • Feel free to use your favorite vegetables, such as asparagus, broccoli, or green beans.
  • Adjust the amount of chili powder to your preferred spice level.
