- Juice of 1 lime
- 1 red bell pepper, cored and sliced
- 1 yellow bell pepper, cored and sliced
- 1 zucchini, sliced

Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, combine chili powder, garlic powder, cumin, salt, and pepper.
- Pat tilapia fillets dry with paper towels. Rub each fillet with 1 tablespoon of olive oil, then sprinkle generously with the spice mixture.
- On a large baking sheet, toss the sliced red bell pepper, yellow bell pepper, zucchini, and cherry tomatoes with the remaining 1 tablespoon of olive oil.
- Arrange the seasoned tilapia fillets on the same baking sheet with the vegetables.
- Roast for 12-15 minutes, or until the tilapia is flaky and cooked through, and the vegetables are tender-crisp.
- Squeeze fresh lime juice over the tilapia and vegetables.
- Garnish with fresh cilantro, if desired, and serve immediately.

- You can substitute other firm white fish like cod or snapper for tilapia.
- Feel free to use your favorite vegetables, such as asparagus, broccoli, or green beans.
