Description
These flavorful chicken fajitas are easy to make and perfect for a quick weeknight meal. Tender chicken and colorful bell peppers are seasoned and seared to perfection.

- 1 pound boneless, skinless chicken breasts, thinly sliced
- 1 tablespoon olive oil
- 1 large onion, thinly sliced
- 2 bell peppers (any color), thinly sliced
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
- 8 small flour tortillas
- Optional toppings: salsa, sour cream, guacamole, shredded lettuce
Instructions
- Heat olive oil in a large skillet or cast-iron pan over medium-high heat.
- Add sliced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Add sliced onion and bell peppers to the same skillet. Cook, stirring occasionally, until vegetables are tender-crisp, about 5-7 minutes.
- Return chicken to the skillet. Stir in chili powder, cumin, garlic powder, salt, and pepper. Cook for another 1-2 minutes, stirring to coat the chicken and vegetables with the seasonings.
- Warm the tortillas according to package directions.
- Serve the chicken and vegetable mixture in warm tortillas with your favorite toppings.
Notes
- For extra spice, add a pinch of cayenne pepper with the other seasonings.
- You can prepare the chicken and vegetables ahead of time and reheat them just before serving.
- Try adding other vegetables like mushrooms or zucchini for variety.
