Description

These flavorful chicken fajitas are easy to make and perfect for a quick weeknight meal. Tender chicken and colorful bell peppers are seasoned and seared to perfection.


Ingredients

  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 2 bell peppers (any color), thinly sliced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 8 small flour tortillas
  • Optional toppings: salsa, sour cream, guacamole, shredded lettuce

Instructions

  1. Heat olive oil in a large skillet or cast-iron pan over medium-high heat.
  2. Add sliced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. Add sliced onion and bell peppers to the same skillet. Cook, stirring occasionally, until vegetables are tender-crisp, about 5-7 minutes.
  4. Return chicken to the skillet. Stir in chili powder, cumin, garlic powder, salt, and pepper. Cook for another 1-2 minutes, stirring to coat the chicken and vegetables with the seasonings.
  5. Warm the tortillas according to package directions.
  6. Serve the chicken and vegetable mixture in warm tortillas with your favorite toppings.

Notes

  • For extra spice, add a pinch of cayenne pepper with the other seasonings.
  • You can prepare the chicken and vegetables ahead of time and reheat them just before serving.
  • Try adding other vegetables like mushrooms or zucchini for variety.
