- 1 tbsp shawarma spice blend

- 1 cup cooked quinoa
- 1 cucumber, diced
- 1 tomato, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup parsley, chopped
- 1/2 cup tahini sauce
Instructions
- Preheat oven to 400°F (200°C).
- Toss cauliflower florets with olive oil, shawarma spice blend, salt, and pepper.
- Spread cauliflower on a baking sheet and roast for 25 minutes, flipping halfway.
- Divide cooked quinoa among bowls.
- Top with roasted cauliflower, cucumber, tomato, red onion, and parsley.
- Drizzle with tahini sauce before serving.
Notes
- For extra flavor, marinate cauliflower in spices for 30 minutes before roasting.
- Replace quinoa with rice or couscous if preferred.
