Description

Ingredients

  • 1 large cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1 tbsp shawarma spice blend
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup parsley, chopped
  • 1/2 cup tahini sauce

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cauliflower florets with olive oil, shawarma spice blend, salt, and pepper.
  3. Spread cauliflower on a baking sheet and roast for 25 minutes, flipping halfway.
  4. Divide cooked quinoa among bowls.
  5. Top with roasted cauliflower, cucumber, tomato, red onion, and parsley.
  6. Drizzle with tahini sauce before serving.
