  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 small corn tortillas
  • 1/2 cup chopped white onion
  • 1/2 cup chopped fresh cilantro (for topping)
  • 1/4 cup crumbled cotija cheese (optional)
  • Lime wedges, for serving
  • Salsa, for serving

Instructions

  1. In a shallow dish or resealable bag, combine the orange juice, lime juice, minced garlic, 1/4 cup chopped cilantro, cumin, chili powder, salt, and pepper.
  2. Add the flank steak, turning to coat evenly. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  3. Preheat a grill or grill pan to medium-high heat.
  4. Remove the steak from the marinade, discarding the excess marinade.
  5. Grill the steak for 4-6 minutes per side, or until it reaches your desired doneness.
  6. Let the steak rest for 5-10 minutes before thinly slicing against the grain, then chopping into small pieces.
  7. Warm the corn tortillas on the grill or in a dry skillet for about 30 seconds per side, until soft and pliable.
  8. Assemble the tacos by placing a generous amount of chopped carne asada in each warm tortilla.
  9. Top with chopped white onion, fresh cilantro, and cotija cheese (if using).
  10. Serve immediately with lime wedges and your favorite salsa.

  • For extra flavor, you can add a pinch of smoked paprika to the marinade.
