- 1/2 cup orange juice
- 1/4 cup lime juice
- 3 cloves garlic, minced
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 small corn tortillas
- 1/2 cup chopped white onion
- 1/2 cup chopped fresh cilantro (for topping)
- 1/4 cup crumbled cotija cheese (optional)
- Lime wedges, for serving
- Salsa, for serving
Instructions
- In a shallow dish or resealable bag, combine the orange juice, lime juice, minced garlic, 1/4 cup chopped cilantro, cumin, chili powder, salt, and pepper.
- Add the flank steak, turning to coat evenly. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
- Preheat a grill or grill pan to medium-high heat.
- Remove the steak from the marinade, discarding the excess marinade.
- Grill the steak for 4-6 minutes per side, or until it reaches your desired doneness.
- Let the steak rest for 5-10 minutes before thinly slicing against the grain, then chopping into small pieces.
- Warm the corn tortillas on the grill or in a dry skillet for about 30 seconds per side, until soft and pliable.
- Assemble the tacos by placing a generous amount of chopped carne asada in each warm tortilla.
- Top with chopped white onion, fresh cilantro, and cotija cheese (if using).
- Serve immediately with lime wedges and your favorite salsa.
Notes
- For extra flavor, you can add a pinch of smoked paprika to the marinade.
- Adjust the amount of chili powder to your preferred spice level.
- You can use flour tortillas instead of corn tortillas if you prefer.
- Leftover carne asada can be stored in an airtight container in the refrigerator for up to 3 days.
