Description

A flavorful and aromatic Caribbean fish curry, perfect for a warming and satisfying meal. This dish features tender white fish simmered in a rich coconut milk sauce with vibrant spices and fresh vegetables.


Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 Scotch bonnet pepper, seeded and minced (optional, for heat)
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cumin
  • 1 can (13.5 ounces) full-fat coconut milk
  • 1/2 cup vegetable broth
  • 1 pound firm white fish fillets (such as cod, snapper, or halibut), cut into 2-inch pieces
  • 1/2 cup chopped fresh cilantro
  • Juice of 1 lime
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Stir in garlic, ginger, red bell pepper, green bell pepper, and Scotch bonnet pepper (if using). Cook for another 5-7 minutes, until vegetables are tender-crisp.
  3. Add curry powder, turmeric, and cumin. Cook for 1 minute, stirring constantly, until fragrant.
  4. Pour in coconut milk and vegetable broth. Bring to a simmer, then reduce heat to low, cover, and let it cook for 10 minutes to allow flavors to meld.
  5. Gently add the fish pieces to the simmering sauce. Cover and cook for 5-8 minutes, or until the fish is cooked through and flakes easily with a fork. Be careful not to overcook.
  6. Stir in fresh cilantro and lime juice. Season with salt and black pepper to taste.
  7. Serve hot with rice or your favorite side dish.

Notes

  • Adjust the amount of Scotch bonnet pepper to your preferred spice level.
  • For a thicker curry, you can simmer the sauce uncovered for a few extra minutes before adding the fish.
  • This curry also tastes great with shrimp or other seafood.
