- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 large red bell pepper, thinly sliced
- 1 large green bell pepper, thinly sliced
- 1 large yellow bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 2 tablespoons Cajun seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 cup chicken broth
- Fresh parsley, chopped, for garnish (optional)
Instructions
- In a large bowl, combine the chicken pieces with 1 tablespoon of olive oil, 1 tablespoon of Cajun seasoning, garlic powder, onion powder, and black pepper. Toss to coat evenly.
- Heat the remaining 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
- Add the seasoned chicken to the skillet and cook for 5-7 minutes, or until browned and cooked through. Remove the chicken from the skillet and set aside.
- Add the sliced bell peppers and onion to the same skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender-crisp.
- Stir in the remaining 1 tablespoon of Cajun seasoning and the chicken broth. Bring to a simmer.
- Return the cooked chicken to the skillet with the vegetables. Toss to combine and heat through.
- Serve hot, garnished with fresh parsley if desired.
