Description

This recipe features tender chicken and colorful bell peppers tossed in a spicy Cajun seasoning, perfect for a quick and flavorful meal.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 large red bell pepper, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 1 large yellow bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. In a large bowl, combine the chicken pieces with 1 tablespoon of olive oil, 1 tablespoon of Cajun seasoning, garlic powder, onion powder, and black pepper. Toss to coat evenly.
  2. Heat the remaining 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
  3. Add the seasoned chicken to the skillet and cook for 5-7 minutes, or until browned and cooked through. Remove the chicken from the skillet and set aside.
  4. Add the sliced bell peppers and onion to the same skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender-crisp.
  5. Stir in the remaining 1 tablespoon of Cajun seasoning and the chicken broth. Bring to a simmer.
  6. Return the cooked chicken to the skillet with the vegetables. Toss to combine and heat through.
  7. Serve hot, garnished with fresh parsley if desired.
