Description
Brownie cookies are a delightful cross between a fudgy brownie and a chewy cookie. They feature a rich chocolate flavor with a slightly crisp edge and a soft, gooey center.

- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract (alcohol-free)
- 1/2 cup (42g) unsweetened cocoa powder
- 1/2 cup (60g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup (170g) chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, whisk together melted butter and granulated sugar until smooth.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together cocoa powder, flour, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in chocolate chips, if using.
- Drop rounded tablespoons of dough onto prepared baking sheets, leaving space between cookies.
- Bake for 9-11 minutes, or until edges are set and centers are still slightly soft.
- Let cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
- Do not overbake the cookies to ensure a fudgy texture.
- For extra chewiness, chill the dough for 30 minutes before baking.
- Store leftover cookies in an airtight container at room temperature for up to 3 days.
