  • 3 cups fresh broccoli florets, chopped
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1/2 cup milk
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese, divided
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 1/2 cup crushed butter crackers (like Ritz) or breadcrumbs for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cooked rice and chopped broccoli florets.
  3. In a separate medium bowl, whisk together the cream of mushroom soup, milk, mayonnaise, 3/4 cup of the shredded cheddar cheese, garlic powder, onion powder, salt, and pepper until well combined.
  4. Pour the soup mixture over the rice and broccoli. Stir gently to ensure everything is evenly coated.
  5. Transfer the mixture to the prepared baking dish and spread it into an even layer.
  6. Sprinkle the remaining 1/4 cup of shredded cheddar cheese over the top of the casserole.
  7. Evenly sprinkle the crushed crackers or breadcrumbs over the cheese.
  8. Bake for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.
