- 3 cups fresh broccoli florets, chopped
- 1 can (10.5 ounces) cream of mushroom soup
- 1/2 cup milk
- 1/2 cup mayonnaise
- 1 cup shredded cheddar cheese, divided
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and black pepper to taste
- 1/2 cup crushed butter crackers (like Ritz) or breadcrumbs for topping
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
- In a large bowl, combine the cooked rice and chopped broccoli florets.
- In a separate medium bowl, whisk together the cream of mushroom soup, milk, mayonnaise, 3/4 cup of the shredded cheddar cheese, garlic powder, onion powder, salt, and pepper until well combined.
- Pour the soup mixture over the rice and broccoli. Stir gently to ensure everything is evenly coated.
- Transfer the mixture to the prepared baking dish and spread it into an even layer.
- Sprinkle the remaining 1/4 cup of shredded cheddar cheese over the top of the casserole.
- Evenly sprinkle the crushed crackers or breadcrumbs over the cheese.
- Bake for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.
- Remove from the oven and let it sit for 5 minutes before serving.

- For a healthier version, use brown rice and low-fat soup and mayonnaise.
- Add cooked chicken or ham for a more substantial main dish.
