- 1 head broccoli, finely chopped
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 large eggs, beaten
- 1/4 cup milk
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
- Vegetable oil for frying
Instructions
- In a large bowl, combine the finely chopped broccoli, flour, Parmesan cheese, beaten eggs, milk, garlic powder, salt, and pepper. Mix well until everything is combined.
- Heat vegetable oil in a large skillet over medium heat.
- Drop spoonfuls of the broccoli mixture into the hot oil, flattening them slightly with the back of a spoon to form fritters.
- Cook for 3-4 minutes per side, or until golden brown and cooked through.
- Remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil.
- Serve warm.
Notes
- You can add other vegetables like grated carrots or corn to the mixture.
- Serve with your favorite dipping sauce, such as yogurt dip or marinara.
- Leftover fritters can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a pan or oven.
