Juicy chicken breasts stuffed with a creamy, cheesy broccoli mixture, then baked to golden perfection. This dish is a flavorful and satisfying meal.

- 4 boneless, skinless chicken breasts (about 6–8 oz each)
- 1 cup chopped fresh broccoli florets
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and black pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
- In a medium bowl, combine the chopped broccoli, softened cream cheese, cheddar cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix well until everything is combined.
- Place each chicken breast on a cutting board. Carefully cut a pocket into the thickest part of each chicken breast, being careful not to cut all the way through.
- Spoon the broccoli and cheese mixture evenly into the pockets of each chicken breast.
- Season the outside of the stuffed chicken breasts with a little more salt and pepper.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes per side, until lightly browned.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Remove from the oven and let rest for a few minutes before serving.
Notes
- For extra flavor, add a pinch of red pepper flakes to the broccoli mixture.
- If you don’t have an oven-safe skillet, you can transfer the seared chicken to the prepared baking dish before baking.
- Serve with a side of rice, roasted vegetables, or a simple green salad.
