Description

Juicy chicken breasts stuffed with a creamy, cheesy broccoli mixture, then baked to golden perfection. This dish is a flavorful and satisfying meal.


Ingredients

  • 4 boneless, skinless chicken breasts (about 68 oz each)
  • 1 cup chopped fresh broccoli florets
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a medium bowl, combine the chopped broccoli, softened cream cheese, cheddar cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix well until everything is combined.
  3. Place each chicken breast on a cutting board. Carefully cut a pocket into the thickest part of each chicken breast, being careful not to cut all the way through.
  4. Spoon the broccoli and cheese mixture evenly into the pockets of each chicken breast.
  5. Season the outside of the stuffed chicken breasts with a little more salt and pepper.
  6. Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes per side, until lightly browned.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  8. Remove from the oven and let rest for a few minutes before serving.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the broccoli mixture.
  • If you don’t have an oven-safe skillet, you can transfer the seared chicken to the prepared baking dish before baking.
  • Serve with a side of rice, roasted vegetables, or a simple green salad.
