Creamy and comforting broccoli cheese soup, perfect for a warming meal.

- 2 tablespoons olive oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 4 cups broccoli florets, chopped
- 1 cup milk
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups shredded cheddar cheese
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Pour in chicken or vegetable broth and bring to a simmer.
- Add broccoli florets. Reduce heat to medium-low, cover, and cook until broccoli is tender, about 10-15 minutes.
- Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer portions of the soup to a regular blender and blend until smooth, then return to the pot.
- Stir in milk, heavy cream, salt, and pepper. Heat gently, but do not boil.
- Remove the pot from heat and gradually stir in shredded cheddar cheese until completely melted and smooth.
- Serve hot.
Notes
- For a thicker soup, you can mash some of the broccoli with a fork before blending.
- Adjust the amount of cheese to your preference.
- Garnish with extra shredded cheese or croutons.
