Description

Creamy and comforting broccoli cheese soup, perfect for a warming meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 4 cups broccoli florets, chopped
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded cheddar cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  2. Stir in minced garlic and cook for 1 minute more until fragrant.
  3. Pour in chicken or vegetable broth and bring to a simmer.
  4. Add broccoli florets. Reduce heat to medium-low, cover, and cook until broccoli is tender, about 10-15 minutes.
  5. Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer portions of the soup to a regular blender and blend until smooth, then return to the pot.
  6. Stir in milk, heavy cream, salt, and pepper. Heat gently, but do not boil.
  7. Remove the pot from heat and gradually stir in shredded cheddar cheese until completely melted and smooth.
  8. Serve hot.

Notes

  • For a thicker soup, you can mash some of the broccoli with a fork before blending.
  • Adjust the amount of cheese to your preference.
  • Garnish with extra shredded cheese or croutons.
