Instructions
- Preheat oven to 375°F (190°C). Grease a mini muffin tin.
- In a large bowl, combine the cooked quinoa, chopped broccoli, shredded cheddar cheese, breadcrumbs, beaten egg, olive oil, garlic powder, salt, and pepper. Mix well until all ingredients are combined.
- Spoon the mixture into the prepared mini muffin tin, filling each cup about two-thirds full.
- Bake for 15-20 minutes, or until the bites are golden brown and set.
- Let cool in the muffin tin for a few minutes before removing.
