Description

Ingredients

  • 1 clove garlic, minced
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 2 cups broccoli florets, chopped
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 30 seconds until fragrant.
  2. Stir in orzo pasta and cook for 1-2 minutes, or until lightly toasted.
  3. Pour in vegetable broth and bring to a simmer. Reduce heat to low, cover, and cook for 10-12 minutes, or until orzo is tender and most of the liquid is absorbed.
  4. While the orzo cooks, steam the broccoli florets until tender-crisp, about 3-5 minutes.
  5. Once the orzo is cooked, stir in the milk, shredded cheddar cheese, and steamed broccoli.
  6. Cook for an additional 2-3 minutes, stirring constantly, until the cheese is melted and the sauce is creamy.
  7. Season with salt and black pepper to taste. Serve immediately.

  • For a richer flavor, use whole milk or cream.
  • Add a pinch of red pepper flakes for a subtle heat.
