Ingredients

  • 1/4 cup unsweetened almond milk
  • 1/4 cup fresh or frozen blueberries
  • 1 tablespoon maple syrup (optional, for added sweetness)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine rolled oats, vanilla protein powder, applesauce, almond butter, almond milk, blueberries, maple syrup (if using), vanilla extract, and a pinch of salt in a large bowl.
  2. Mix everything together until well combined. The mixture should be thick and slightly sticky.
  3. Roll the mixture into bite-sized balls (about 1 inch in diameter).
  4. Place the protein bites on a plate or baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to allow them to firm up.
  6. Store in an airtight container in the refrigerator for up to 5-7 days.

Notes

  • You can use any type of protein powder you prefer.
  • If the mixture is too dry, add a little more almond milk, one teaspoon at a time.
  • If the mixture is too wet, add a little more rolled oats or protein powder.
  • For an extra boost of flavor, you can add a pinch of cinnamon or nutmeg.
  • These bites can also be frozen for longer storage. Thaw in the refrigerator before serving.
