Description
Blackstone Shrimp Scampi is a quick and flavorful dish featuring succulent shrimp cooked on a griddle with garlic, butter, and lemon.
Ingredients
Scale
- 1 pound large shrimp, peeled and deveined
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 cup dry white grape juice or chicken broth
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh parsley, chopped
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- Crusty bread or pasta for serving
Instructions
- Preheat your Blackstone griddle to medium-high heat.
- Pat the shrimp dry with paper towels. Season with salt and black pepper.
- Melt 2 tablespoons of butter on the griddle. Add the minced garlic and red pepper flakes (if using). Cook for 30 seconds until fragrant, being careful not to burn the garlic.
- Add the shrimp to the griddle in a single layer. Cook for 1-2 minutes per side, until pink and opaque.
- Pour in the white grape juice or chicken broth and lemon juice. Bring to a simmer and cook for 1 minute, allowing the liquid to reduce slightly.
- Stir in the remaining 2 tablespoons of butter and the chopped fresh parsley. Toss to coat the shrimp.
- Serve immediately with crusty bread or over pasta.
Notes
- Do not overcook the shrimp, as it can become rubbery.
- Adjust the amount of red pepper flakes to your spice preference.
- For a richer flavor, use good quality butter.
