Description

Crispy beef tacos dorado cooked on a Blackstone griddle, perfect for a flavorful meal.


Ingredients

  • 1 lb ground beef
  • 1/2 cup finely diced onion
  • 1 clove garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup water or beef broth
  • 12 corn tortillas
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup vegetable oil (for griddle)
  • Optional toppings: shredded lettuce, diced tomatoes, sour cream, salsa, hot sauce

Instructions

  1. Preheat your Blackstone griddle to medium-high heat.
  2. Add the ground beef to the griddle. Break it apart with a spatula and cook until browned, about 5-7 minutes.
  3. Drain any excess grease from the beef.
  4. Add the diced onion and minced garlic to the beef. Cook until softened, about 3-5 minutes.
  5. Stir in the chili powder, cumin, oregano, salt, and black pepper. Cook for 1 minute, stirring constantly.
  6. Pour in the water or beef broth. Bring to a simmer and cook until most of the liquid has evaporated, about 3-5 minutes.
  7. Remove the beef mixture from the griddle and set aside.
  8. Clean the griddle surface. Add the vegetable oil to the griddle.
  9. Dip each corn tortilla quickly in the hot oil on both sides to soften.
  10. Place a spoonful of the beef mixture and a sprinkle of shredded cheese on one half of each softened tortilla.
  11. Fold the tortilla in half to form a taco. Press down gently with a spatula.
  12. Cook the tacos on the griddle for 2-3 minutes per side, or until golden brown and crispy.
  13. Remove the tacos from the griddle and serve immediately with your favorite toppings.

Notes

  • Adjust the spice level to your preference by adding more or less chili powder.
  • For extra flavor, you can add a pinch of smoked paprika to the beef mixture.
  • Ensure the tortillas are soft before folding to prevent them from breaking.
