Crispy beef tacos dorado cooked on a Blackstone griddle, perfect for a flavorful meal.

- 1 lb ground beef
- 1/2 cup finely diced onion
- 1 clove garlic, minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup water or beef broth
- 12 corn tortillas
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup vegetable oil (for griddle)
- Optional toppings: shredded lettuce, diced tomatoes, sour cream, salsa, hot sauce
Instructions
- Preheat your Blackstone griddle to medium-high heat.
- Add the ground beef to the griddle. Break it apart with a spatula and cook until browned, about 5-7 minutes.
- Drain any excess grease from the beef.
- Add the diced onion and minced garlic to the beef. Cook until softened, about 3-5 minutes.
- Stir in the chili powder, cumin, oregano, salt, and black pepper. Cook for 1 minute, stirring constantly.
- Pour in the water or beef broth. Bring to a simmer and cook until most of the liquid has evaporated, about 3-5 minutes.
- Remove the beef mixture from the griddle and set aside.
- Clean the griddle surface. Add the vegetable oil to the griddle.
- Dip each corn tortilla quickly in the hot oil on both sides to soften.
- Place a spoonful of the beef mixture and a sprinkle of shredded cheese on one half of each softened tortilla.
- Fold the tortilla in half to form a taco. Press down gently with a spatula.
- Cook the tacos on the griddle for 2-3 minutes per side, or until golden brown and crispy.
- Remove the tacos from the griddle and serve immediately with your favorite toppings.
Notes
- Adjust the spice level to your preference by adding more or less chili powder.
- For extra flavor, you can add a pinch of smoked paprika to the beef mixture.
- Ensure the tortillas are soft before folding to prevent them from breaking.
- Do not overcrowd the griddle when cooking the tacos to ensure even crisping.
