- 1 tsp vanilla extract
- 1 flax egg (1 tbsp flaxseed meal + 3 tbsp water)

- 1/4 tsp salt
- 1/2 cup vegan chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix flaxseed meal and water in a small bowl to make the flax egg. Set aside for 5 minutes.
- In a large bowl, cream together vegan butter, brown sugar, and white sugar until smooth.
- Add the flax egg and vanilla extract. Mix well.
- In another bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until combined.
- Fold in chocolate chips.
- Scoop dough onto the baking sheet, spacing 2 inches apart.
- Bake for 10-12 minutes or until edges are golden.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- For crispier cookies, bake for an extra 1-2 minutes.
- Store in an airtight container for up to 5 days.
- Substitute chocolate chips with chopped nuts or dried fruit if preferred.
