Ingredients

- 1 cup orzo pasta
- 2 cups vegetable broth
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup feta cheese, crumbled
- 1 tbsp fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add minced garlic and sauté for 1 minute.
- Add orzo and toast for 2 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 10 minutes.
- Stir in cherry tomatoes and cook for 2 more minutes.
- Remove from heat and top with feta cheese and parsley.
- Season with salt and pepper.
Notes
- Use whole wheat orzo for extra fiber.
- Substitute vegetable broth with chicken broth if preferred.
- Add spinach or basil for extra flavor.
