Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add minced garlic and sauté for 1 minute.
  3. Add orzo and toast for 2 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 10 minutes.
  6. Stir in cherry tomatoes and cook for 2 more minutes.
  7. Remove from heat and top with feta cheese and parsley.
  8. Season with salt and pepper.
