- 8 cups chicken or vegetable broth
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 2 tbsp soy sauce
- 1 tbsp vinegar
- 1 tbsp sesame oil
- 4 ramen noodle servings
- 2 soft-boiled eggs, halved
- 1 cup sliced mushrooms
- 2 green onions, chopped
- 1 cup baby spinach
- 1 carrot, julienned
- 1 tsp chili oil (optional)
Instructions
- Heat sesame oil in a large pot over medium heat. Add garlic and ginger, sauté for 1 minute.
- Pour in broth and bring to a simmer. Add soy sauce and vinegar.
- Cook noodles separately according to package instructions, then drain.
- Divide noodles into bowls. Ladle hot broth over them.
- Top with mushrooms, spinach, carrot, green onions, and soft-boiled eggs.
- Drizzle with chili oil if desired. Serve hot.
