- 3 ripe bananas
- 1/4 cup maple syrup
- 1/4 cup almond milk
- 1 tsp vanilla extract
- 2 cups gluten-free flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the bananas in a bowl.
- Add maple syrup, almond milk, and vanilla extract, then mix well.
- In another bowl, whisk the gluten-free flour, baking soda, cinnamon, and salt.
- Combine wet and dry ingredients, stirring until just mixed.
- Fold in walnuts if using.
- Pour batter into a greased loaf pan.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Use very ripe bananas for best sweetness.
- Check bread at 45 minutes to avoid overbaking.
- Store leftovers wrapped for up to 3 days.
