Description

A simple and nutritious banana bread that’s both vegan and gluten-free.


Ingredients

  • 3 ripe bananas
  • 1/4 cup maple syrup
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 2 cups gluten-free flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the bananas in a bowl.
  3. Add maple syrup, almond milk, and vanilla extract, then mix well.
  4. In another bowl, whisk the gluten-free flour, baking soda, cinnamon, and salt.
  5. Combine wet and dry ingredients, stirring until just mixed.
  6. Fold in walnuts if using.
  7. Pour batter into a greased loaf pan.
  8. Bake for 45-50 minutes or until a toothpick comes out clean.
  9. Let cool before slicing.

  • Use very ripe bananas for best sweetness.
