Ingredients

- 4 cups mixed greens (lettuce, spinach, arugula)
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup croutons
- 2 tbsp grated Parmesan cheese
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Wash and dry the mixed greens.
- Chop the tomatoes, cucumber, and red onion.
- Combine greens, tomatoes, cucumber, and red onion in a large bowl.
- In a small bowl, whisk olive oil, vinegar, mustard, salt, and pepper.
- Pour dressing over the salad and toss gently.
- Top with croutons and Parmesan cheese.
- Serve immediately.
