Ingredients

  • 4 cups mixed greens (lettuce, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup croutons
  • 2 tbsp grated Parmesan cheese
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash and dry the mixed greens.
  2. Chop the tomatoes, cucumber, and red onion.
  3. Combine greens, tomatoes, cucumber, and red onion in a large bowl.
  4. In a small bowl, whisk olive oil, vinegar, mustard, salt, and pepper.
  5. Pour dressing over the salad and toss gently.

  7. Serve immediately.
