  • 1 1/2 pounds beef tenderloin, cut into 1-inch thick medallions
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter
  • 8 ounces cremini mushrooms, sliced
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/4 cup heavy cream
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. Season beef tenderloin medallions with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear beef medallions for 2-3 minutes per side for medium-rare, or until desired doneness. Remove beef from skillet and set aside.
  4. Melt butter in the same skillet. Add sliced mushrooms and chopped onion. Cook until mushrooms are tender and browned, about 5-7 minutes.
  5. Add minced garlic and cook for 1 minute more until fragrant.
  6. Pour in beef broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 2-3 minutes until slightly reduced.
  7. Stir in heavy cream and cook for another 1-2 minutes until the sauce thickens slightly.
  8. Return beef medallions to the skillet and spoon sauce over them.
  9. Garnish with fresh parsley before serving.

  • For a richer flavor, use a mix of wild mushrooms.
  • Adjust the amount of cream to your preference for a thicker or thinner sauce.
