- 1 1/2 pounds beef tenderloin, cut into 1-inch thick medallions
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon butter
- 8 ounces cremini mushrooms, sliced
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1/2 cup beef broth
- 1/4 cup heavy cream
- 1 tablespoon chopped fresh parsley for garnish
Instructions
- Season beef tenderloin medallions with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Sear beef medallions for 2-3 minutes per side for medium-rare, or until desired doneness. Remove beef from skillet and set aside.
- Melt butter in the same skillet. Add sliced mushrooms and chopped onion. Cook until mushrooms are tender and browned, about 5-7 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Pour in beef broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 2-3 minutes until slightly reduced.
- Stir in heavy cream and cook for another 1-2 minutes until the sauce thickens slightly.
- Return beef medallions to the skillet and spoon sauce over them.
- Garnish with fresh parsley before serving.
Notes
- For a richer flavor, use a mix of wild mushrooms.
- Adjust the amount of cream to your preference for a thicker or thinner sauce.
- Serve with mashed potatoes, rice, or roasted vegetables.
