A hearty beef and vegetable stew packed with flavor and nutrients.
Ingredients

- 1 lb beef stew meat, cubed
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides. Remove and set aside.
- Add onion, carrots, and garlic to the pot. Cook until softened.
- Return beef to the pot. Add potatoes, broth, salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Remove bay leaf before serving.
Notes
- Cut beef into even-sized pieces for uniform cooking.
- For a thicker stew, mix 1 tbsp flour with 2 tbsp water and stir into the stew during the last 10 minutes.
