Description

  • 1 pound small red potatoes, quartered
  • 1 pound carrots, peeled and chopped
  • 1 large onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 1 lemon, thinly sliced
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine the quartered potatoes, chopped carrots, and onion wedges.
  3. Drizzle with olive oil, sprinkle with dried thyme, dried rosemary, salt, and black pepper. Toss to coat evenly.
  4. Spread the seasoned vegetables in a single layer on a large baking sheet.
  5. Roast for 25-30 minutes, or until vegetables are tender and slightly caramelized.
  6. While the vegetables are roasting, season the cod fillets with salt and black pepper.
  7. Once the vegetables are nearly done, make space on the baking sheet and add the seasoned cod fillets.
  8. Arrange lemon slices over the cod.
  9. Return to the oven and bake for another 10-15 minutes, or until the cod is cooked through and flakes easily with a fork.
  10. Garnish with fresh chopped parsley before serving.
