Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp turmeric powder
  • 1 tsp cumin
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 lb chicken breast, diced
  • 1 cup spinach
  • Salt and pepper to taste
  • 1 lemon, juiced

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté for 3 minutes.
  3. Stir in turmeric and cumin. Cook for 1 minute.
  4. Add carrots and celery. Sauté for 5 minutes.
  5. Pour in chicken broth and bring to a boil.
  6. Add diced chicken. Simmer for 15 minutes.
  7. Stir in spinach and cook for 2 minutes.
  8. Season with salt, pepper, and lemon juice.
  9. Serve hot.
