Ingredients

- 1 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp turmeric powder
- 1 tsp cumin
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 lb chicken breast, diced
- 1 cup spinach
- Salt and pepper to taste
- 1 lemon, juiced
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, and ginger. Sauté for 3 minutes.
- Stir in turmeric and cumin. Cook for 1 minute.
- Add carrots and celery. Sauté for 5 minutes.
- Pour in chicken broth and bring to a boil.
- Add diced chicken. Simmer for 15 minutes.
- Stir in spinach and cook for 2 minutes.
- Season with salt, pepper, and lemon juice.
- Serve hot.

- Use fresh turmeric for stronger flavor.
- Add black pepper to enhance turmeric absorption.
