- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp turmeric powder
- 1 tsp black pepper
- 1 lb chicken breast, cubed
- 4 cups chicken broth
- 1 carrot, sliced
- 1 celery stalk, chopped
- 1 cup spinach
- 1 lemon, juiced
- Salt to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and ginger. Sauté for 2 minutes.
- Stir in turmeric and black pepper, cook for 1 minute.
- Add chicken and cook until browned, about 5 minutes.
- Pour in chicken broth and bring to a boil.
- Add carrot and celery. Simmer for 15 minutes.
- Stir in spinach and lemon juice. Cook for 2 more minutes.
- Season with salt. Serve hot.
Notes
- For extra flavor, add a pinch of cayenne pepper.
- Replace chicken breast with thighs for a richer taste.
- Store leftovers in the fridge for up to 3 days.
