- 1/2 cup almond flour

- 1/8 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat the cod fillets dry with paper towels. Spread Dijon mustard evenly over both sides of each fillet.
- In a shallow dish, combine the almond flour, chopped almonds, fresh parsley, garlic powder, sea salt, and black pepper. Mix well.
- Dredge each cod fillet in the almond mixture, pressing gently to ensure the crust adheres.
- Place the crusted cod fillets on the prepared baking sheet. Drizzle with olive oil.
- Bake for 12-15 minutes, or until the fish flakes easily with a fork and the crust is golden brown.
