Description

Almond Crusted Cod is a delicious and healthy fish dish. It features cod fillets coated in a crunchy almond crust and baked to perfection. This recipe is simple to make and suitable for a weeknight meal or a special occasion.

Ingredients

Scale
  • 1 1/2 pounds cod fillets, 1-inch thick
  • 2 tablespoons Dijon mustard
  • 1/2 cup almond flour
  • 1/4 cup finely chopped almonds
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat the cod fillets dry with paper towels. Spread Dijon mustard evenly over both sides of each fillet.
  3. In a shallow dish, combine the almond flour, chopped almonds, fresh parsley, garlic powder, sea salt, and black pepper. Mix well.
  4. Dredge each cod fillet in the almond mixture, pressing gently to ensure the crust adheres.
  5. Place the crusted cod fillets on the prepared baking sheet. Drizzle with olive oil.
  6. Bake for 12-15 minutes, or until the fish flakes easily with a fork and the crust is golden brown.
  7. Serve immediately with your favorite side dishes.

Notes

  • For extra flavor, add a pinch of smoked paprika to the almond crust.
  • You can use other white fish like haddock or tilapia instead of cod.
  • Serve with a squeeze of fresh lemon juice for brightness.
